BBQ Chicken Pizza

I have some really cool news that I want to share with everyone.  Last week, Zack and I both got inducted into honor societies!  I was inducted into Psi Chi, the international honor society for Psychology and Zack was inducted into Phi Theta Kappa.  PTK only accepts students who are in the top 5% of the school and it is a really prestigious honor.  I am so proud of my Zack!

The night of his induction ceremony, we had this delicious pizza.  I work an hour away from home so it was going to be a time crunch getting home and preparing this and then driving 20-30 minutes to Zack’s school for the ceremony.  I was kinda anxious about it, but I shouldn’t have worried, because when I got home, Zack had it ready for us!

He did an awesome job making it.  It was delicious.

Zack wanted to be artsy with this picture, so he put the stripe of BBQ sauce down the side of the plate.

I am so thankful to have him in my life.  He is so good to me.

BBQ Chicken Pizza

Yield: 3-4 servings

– 1 pizza crust (homemade, store bought, refrigerated)

– 1/2 c BBQ sauce

– 1 cup cooked and shredded chicken

– 1/2 c thinly sliced onion

– 1 orange bell pepper; diced

– 1 3/4 c Monterey Jack (or cheddar/mozzarella) cheese

– chopped cilantro; to taste (optional)

Preheat oven to 475 degrees.  Place pizza crust on foil lined baking sheet.

Spread BBQ sauce on pizza crust.  Add shredded chicken, onion, and bell pepper on top of sauce.  Top with cheese.

Bake 12-15 minutes or until crust is deep golden brown.  Cut into squares; garnish with cilantro.
