Pizza Bites

Growing up, I loved those frozen pizza bites.  You probably know the ones I’m talking about.  They’re rectangular and frozen and you just pop them in the microwave.  They are probably full of preservatives and horrible for you, but oh so good.

This recipe reminded me a lot of them when I saw it, so I decided to make some for Zack.

He said they were really good.  They were a great bite-size treat!

You could really put any toppings in there.  I just used pepperoni, because it’s Zack’s favorite.

Pizza Bites

– 1 pizza dough (homemade, canned, refrigerated… up to you)

– ~ 3/4 c mozzarella cheese

– 2-3 oz thin sliced pepperoni

– 1 tsp Italian seasoning

– 1/4 c olive oil

– 1 1/2 T grated Parmesan cheese

– pizza or marinara sauce

Prepare pizza dough and roughly chop pepperoni.

Preheat oven to 400 degrees.  Grease a pie pan.

If using refrigerated pizza dough, roll dough out into a large rectangle and cut into 24 pieces.  If using homemade dough, just pinch off walnut sized pieces as you go.

In each dough piece, place a couple of pieces of chopped pepperoni and some cheese.  Seal dough around meat and cheese and place seam side down in pie pan.

Repeat for each bite.

Once assembled, combine oil and spices and brush over the dough.  Sprinkle with Parmesan cheese.

Now you can cover with plastic wrap and refrigerate or freeze or bake right away.

When ready to bake: bake at 400 degrees for 16-20 minutes.  Serve with warm pizza or marinara sauce.

BBQ Chicken Pizza

I have some really cool news that I want to share with everyone.  Last week, Zack and I both got inducted into honor societies!  I was inducted into Psi Chi, the international honor society for Psychology and Zack was inducted into Phi Theta Kappa.  PTK only accepts students who are in the top 5% of the school and it is a really prestigious honor.  I am so proud of my Zack!

The night of his induction ceremony, we had this delicious pizza.  I work an hour away from home so it was going to be a time crunch getting home and preparing this and then driving 20-30 minutes to Zack’s school for the ceremony.  I was kinda anxious about it, but I shouldn’t have worried, because when I got home, Zack had it ready for us!

He did an awesome job making it.  It was delicious.

I am so thankful to have him in my life.  He is so good to me.

BBQ Chicken Pizza

Yield: 3-4 servings

– 1 pizza crust (homemade, store bought, refrigerated)

– 1/2 c BBQ sauce

– 1 cup cooked and shredded chicken

– 1/2 c thinly sliced onion

– 1 orange bell pepper; diced

– 1 3/4 c Monterey Jack (or cheddar/mozzarella) cheese

– chopped cilantro; to taste (optional)

Preheat oven to 475 degrees.  Place pizza crust on foil lined baking sheet.

Spread BBQ sauce on pizza crust.  Add shredded chicken, onion, and bell pepper on top of sauce.  Top with cheese.

Bake 12-15 minutes or until crust is deep golden brown.  Cut into squares; garnish with cilantro.

The BEST Homemade Pizza Sauce & Crust

By now it is common knowledge that Zack and I are pizza addicts.  We have some form of pizza at least once a week (usually).

Well, we finally found the perfect sauce and crust.  It was actually two separate recipes that I found and tweaked.  The crust was originally not whole wheat, but I really wanted that added health edge (if there is such a thing in pizza!).  I’m very glad I did, because this was AMAZING.

There was a lot of sauce left over, so I saved it and served it with some pizza bites for Zack later on.  Post about those coming soon.

I cannot wait to make this pizza again, but I may have to wait a while, because I had no self control when it came to eating it! haha!

 

The BEST Homemade Pizza

Make the whole wheat crust:

– 1 pkg dry yeast

– 1 c warm water

– 1 t sugar

– 1 t salt

– 2 T olive oil

– 1 c whole wheat flour

– 1 1/2 c all purpose flour

Dissolve yeast in warm water.  Add sugar, salt, and oil.  Add flours and mix well.  Cover and let rise in warm place for five minutes.  This makes one soft crust.

Make the sauce:

– 1 (15 oz) can tomato sauce

– 2 (6 oz) cans tomato paste

– 2 t dried oregano

– 2 t garlic powder

– 1 t onion powder

– 1 t ground sweet paprika

– 2 t sugar

– 1/2 t salt

– 4 T olive oil

– 2 t white vinegar

In a large bowl or container, mix all ingredients.

Roll out dough onto pizza pan, cover in sauce, cheese, and toppings of choice.  Bake at 350 degrees for 20-25 minutes or until cheese is melted and crust is browned.
